Obtaining
You can obtain water by smelting (and then filtering) Ice (Water). Filtering is required because the ice includes 20% N2.
Usage
Water is used to grow plants in a Hydroponic Tray or a Hydroponic Station
Water has a specific heat of 72 Joule / mol making it great for cooling.
